Jollof Rice with Chicken
- 3 cups long-grain parboiled rice
- large fresh tomatoes
- 1 red bell pepper (tatashe)
- 2 to 3 scotch bonnet peppers (atarodo) (adjust to taste)
- 1 large onion
- 3 tablespoons tomato paste
- 1/2 cup vegetable oil
- 2 cups chicken or beef stock
- 1 teaspoon thyme
- 1 teaspoon curry powder
- 2 seasoning cubes
- 2 bay leaves
- Salt to taste
